Fresh Green Kelp Seaweed Strips

Fresh kelp in three cuts — wide dark-green sheets, fine shredded strands, and neat cubes. The surface carries a wet, lacquered sheen and the colour runs from deep olive through to a translucent bottle-green at the thinner edges.

The sheets are thick and pliable, the shredded strands springy. Rinse the salt off, then dress them cold with vinegar and chilli, drop the cubes into soup, or braise the sheets until they turn silky.
