Fresh Steamed Whole Sea Snails

Whole sea snails in the shell, steamed and ready to eat. The shells are heavy and spiral, banded in tan and chocolate brown with rows of knobbly ridges, opening onto a cream-and-orange lip.

Inside, the meat is dark, firm and springy with a clean briny sweetness. Lift it out with a pick, dip it in ginger vinegar, or slice it thin and dress it with chilli and coriander.
