Fresh-Frozen Whole Sea Urchins

Whole sea urchins, opened to show the roe. The shells are a deep purple-brown studded with fine spines, and inside sit five lobes of bright saffron-orange roe with a soft, granular texture.

Uni is at its best raw — spoon it straight from the shell with a little soy, or lay it over warm rice. The roe is rich and custardy, with a clean marine sweetness rather than a heavy fishiness.
