Peeled Arctic Sweet Shrimp Tails On

Arctic sweet shrimp, peeled raw with the tails left on. The bodies are pale and translucent with a faint pink blush, while the tails keep their shell in a clean orange-red.

Sweet shrimp are eaten raw for a reason: the flesh is naturally sweet and almost creamy, with none of the bite of cooked prawns. Lay them over rice, serve them as sashimi with a little soy, or warm them very briefly in butter.
